What's the price difference between a chain steakhouse and an independent one?

National chains like LongHorn or Texas Roadhouse typically run $15-$30 for a full entree. Upscale independents and white-tablecloth chains (Capital Grille, Fleming's, Mastro's) usually start around $45-$60 for a steak alone, before sides.

What does 'prime' or 'dry-aged' mean on a steakhouse menu?

'Prime' refers to the USDA's highest quality grade (about 2% of beef qualifies). Dry-aging is a separate process -- weeks of controlled aging that concentrates flavor -- and steakhouses that do it in-house usually say so, since it commands a premium.

Do steakhouses typically charge for sides separately?

At most steakhouses, sides are a la carte and not included with the steak. Brazilian rodizio-style steakhouses like Fogo de Chao are the main exception, bundling sides and cuts into one price.
