The Fogo de Chao experience

How the rodizio service works

Rodizio is a uniquely Brazilian way of dining out — all-you-can-eat, but with ceremony. Here is how it works from the moment you sit down.

Step 1

The Green & Red Disc

Every table gets a two-sided disc. Green side up: the gauchos will bring meats continuously. Red side up: they pass your table. Flip it to red to take a break, visit the Market Table, or rest between courses. Flip back to green when you're ready.

Step 2

The Market Table

Visit the expansive Market Table at any time during your meal. It features 30+ items: seasonal salads, imported cheeses, charcuterie, smoked salmon, Brazilian cheese bread (Pao de Queijo), caramelized bananas, black beans, and hot sides. There's no limit on visits.

Step 3

The Gaucho Service

Gauchos (the carvers/servers) rotate through the restaurant carrying 15+ different fire-roasted cuts on long skewers. They present each cut and carve directly onto your plate. You can accept, pass, or ask them to return with a different temperature or cut.

Tip

Pace Yourself

Start with a light visit to the Market Table to taste the sides and salads. Then flip to green and begin with the beef cuts. Picanha (sirloin cap) and Costela (beef ribs) are the most requested — ask gauchos directly for a specific cut if you don't see it come by.

Tip

Temperature Preference

Most cuts are served rare to medium-rare by default. Ask the gaucho to return with a piece from the inner part of the skewer (more well-done) or the outer tip (more charred and medium-well). Picanha is especially good rare to medium-rare.

Note

The Disc Controls Everything

Don't be afraid to use the red side. The experience is designed for you to control the pace entirely. Most guests alternate between meat rounds and Market Table visits throughout a 1.5 to 2.5 hour meal.

Dietary options

Vegetarian and dietary options at Fogo de Chao

Fogo de Chao is a Brazilian steakhouse at heart, but it has more to offer non-meat-eaters than most steakhouses. Here is what to know before you go.

About Fogo de Chao

The Brazilian churrascaria from the gaucho heartland of Southern Brazil.

Fogo de Chao (pronounced FOH-go de SHOWN) was founded in 1979 in Porto Alegre, Brazil by the Coser and Ongaratto families, who grew up in the Rio Grande do Sul region where gaucho (cowboy) culture and open-fire meat cooking are central traditions. The name means "fire from the ground" in Portuguese.

The first U.S. location opened in Dallas, Texas in 1997. Today Fogo de Chao operates over 70 locations across major U.S. cities and internationally, maintaining the traditional rodizio service model while expanding the bar program and adding seasonal Market Table offerings. The chain was acquired by Rhone Capital in 2018.

The restaurant's identity centers on the gaucho tradition: the gauchos are trained in the specific fire-roasting and carving techniques of southern Brazil, and the Picanha remains the signature cut that defines the Fogo de Chao experience.

Common questions

Fogo de Chao: frequently asked questions

Quick answers to what people most commonly ask about Fogo de Chao's menu, rodizio service, pricing and what to order first.

How does the rodizio service work at Fogo de Chao?

The rodizio (pronounced hoh-DEE-zyo) is an all-you-can-eat service style where gauchos (the servers) circulate continuously through the dining room carrying long skewers of fire-roasted meats. Each gaucho presents their cut tableside and carves directly onto your plate using a long knife and tongs. You control the pace with a two-sided disc: green side up means keep the meats coming; red side up means pause the service so you can rest, visit the Market Table, or simply take a break. You can flip it back to green whenever you're ready.

How much does Fogo de Chao cost per person in 2026?

Pricing varies by location, daypart and market, but typical ranges are: Dinner (Full Churrasco): $69-$79/person at most U.S. locations. Lunch (weekdays): $49-$59/person. Weekend Brunch: ~$54/person. Children under 12 are typically half the adult dinner price; children 2 and under dine free. Beverages, desserts and gratuity are additional. Exact pricing for your city is available on the official Fogo de Chao website at fogodechao.com.

Note: Prices shown above are typical ranges based on widely reported market pricing. Verify with your specific location before visiting.

What is the green and red disc at Fogo de Chao?

Every table is given a small two-sided disc (sometimes called a coaster or card) that controls your meat service. Green side up: gauchos will continue bringing meats to your table. Red side up: the gauchos will pass your table without stopping. Flip it to red when you need a break, want to enjoy the Market Table, or are simply full. Flip back to green when you're ready to receive more meats. It's the signature element of the rodizio dining experience and completely in your control throughout the meal.

What is included in the Market Table at Fogo de Chao?

The Market Table is Fogo de Chao's expansive self-service salad and sides bar included with the Full Churrasco experience. It typically includes 30+ items: seasonal salads, fresh vegetables, imported cheeses, charcuterie and cured meats, smoked salmon, hummus, and a rotating selection of hot sides. The hot side offerings typically include Pao de Queijo (Brazilian cheese bread, gluten-free), caramelized bananas, black beans, polenta, farofa (toasted cassava flour), and mashed potatoes. The Market Table is replenished continuously and you can visit it as many times as you like.

What are the best cuts to try at Fogo de Chao?

First-timers should start with Picanha (prime sirloin cap) — it's the crown jewel of Brazilian churrascaria, always popular and usually the most requested cut. The Fraldinha (bottom sirloin) is rich and well-marbled; Costela (beef ribs) are slow-roasted and deeply flavored; and Cordeiro (lamb chops) are exceptional if you enjoy lamb. For pork, the Lombo (parmesan-crusted pork loin) is a standout. Strategy tip: pace yourself with the Market Table early and save room for multiple rounds of Picanha and Costela. Keep your disc green, but don't fill up on bread before the best cuts arrive.

Are there vegetarian options at Fogo de Chao?

The core rodizio experience is meat-focused, but Fogo de Chao offers several vegetarian-friendly options: The Market Table alone (without meats) is available at select locations as a standalone option. The Market Table itself features extensive vegetarian items including salads, seasonal vegetables, cheeses, hot sides and Brazilian cheese bread (Pao de Queijo, which is gluten-free and vegetarian). Vegetarians and guests who don't eat red meat can often arrange a reduced price for the Market Table only experience. Call ahead to your specific location to confirm current vegetarian pricing and options.

Where are Fogo de Chao locations?

Fogo de Chao has over 70 locations across major U.S. cities including New York City, Los Angeles, Chicago, Houston, Dallas, Atlanta, Miami, Denver, Las Vegas, Washington D.C., San Antonio, and others. International locations include Brazil (the chain's origin country), the Middle East, and select other markets. Use the location finder on the official site at fogodechao.com to find the nearest location, hours, and current pricing for your city.

Is a reservation required at Fogo de Chao?

Reservations are strongly recommended, especially for dinner, weekends, and holiday periods. Walk-ins are accepted when space permits but wait times can be significant at popular locations. You can make reservations online through the official Fogo de Chao website, via OpenTable, or by calling your specific location directly. For large groups of 8 or more, contact the location directly to arrange group seating and any special accommodations.

How long does a meal at Fogo de Chao typically take?

A typical full dinner at Fogo de Chao takes 1.5 to 2.5 hours, depending on your pacing and how many times you visit the Market Table. The experience is designed to be leisurely — you're not rushed, and the all-you-can-eat format encourages multiple rounds. Lunch service tends to move slightly faster, around 60-90 minutes. If you're in a hurry, it's worth mentioning to your server, but the dining format is inherently relaxed and unhurried.
