Salad and Go was founded in 2013 in Gilbert, Arizona by Roushan and Tony Christofellis on a single premise: a salad should cost roughly the same as a fast-food burger combo. Twelve years later, that's still the bet — and the operational answer to it is the drive-thru-only model.

Every Salad and Go location is small-footprint, with no indoor seating, no counter ordering and no dine-in. Customers either pull up to the drive-thru window or pre-order on the app and pick up at the window. Ingredients are prepped fresh daily at each store; the menu is intentionally tight (eight salads, six wraps, four breakfast wraps, five smoothies, two-to-three seasonal soups) so prep is fast and waste stays low.
