Ernest Servantes and Dave Kirkland founded Burnt Bean Co. in October 2020 in downtown Seguin, Texas -- when approximately 17% of U.S. restaurants were closing due to the COVID-19 pandemic. The name "Burnt Bean Co." came from a Spanish-language joke by one of Ernest's former coworkers, who teased that Ernest would "burn the beans" -- frijoles quemados -- while listing competition BBQ staples. The English translation became the restaurant's name.
