From a Laguna Beach dishwasher in 1969 to one of Southern California's most celebrated Mexican restaurants.

Javier Sosa emigrated from Tijuana in 1969 and started as a dishwasher at Tortilla Flats in Laguna Beach. Over nearly 25 years he worked up to general manager across three locations — and is credited with introducing Taco Tuesday to the United States in 1979. In 1995, Sosa and partner Mark Post opened the first Javier's in Laguna Beach, cooking from family recipes rooted in Sinaloa.

After 13 years in Laguna Beach and a second location at Irvine Spectrum (opened 2004), the Newport Beach Crystal Cove location opened in 2008 on Pacific Coast Highway directly across from Crystal Cove State Park. A major renovation completed in May 2024 doubled bar capacity, expanded the patio to 5,600 square feet, and added over 50 seats — bringing total capacity to approximately 370 guests.

The chain has since expanded to Las Vegas (Aria, 2012), Century City (2017), La Jolla (2019), Pasadena, Downtown LA, and Los Cabos, Mexico.
