Polish BBQ Mafia was founded by chef and pitmaster Adam Kajfosz, who honed his culinary skills in prestigious restaurants across Poland, Italy, and Scotland before channeling that fine-dining expertise into a passion project: bringing authentic low-and-slow American BBQ to the Silesian mountains. The concept debuted as a weekend pop-up in Ustroń, where Kajfosz sold out nearly 50 kilograms of smoked meat — including brisket, pulled beef, and ribs — before 3 PM on the very first Sunday. Word spread quickly, and what started as a neighbourhood event became a regional phenomenon.
Over the following years, BBQ Mafia evolved from a mobile food truck into a full-service restaurant with locations in both Wisła (ul. Wyzwolenia 48) and Ustroń (Słoneczna 11). The kitchen fuses the classic American BBQ canon — brisket, beef ribs, pulled pork — with Polish culinary traditions and fine-dining touches, resulting in weekend tasting menus that have featured dry-aged beef tartare, duck breast with mushroom risotto, and seasonal pumpkin preparations. The restaurant is open daily in Wisła and on weekends in Ustroń.
On the competition circuit, BBQ Mafia became a dominant force. The team claimed the Polish Grill & BBQ Championship title in 2019, 2024, and 2025, and represented Poland at the World BBQ Championships in the United States in 2023, where they earned recognition in international competition. Beyond the restaurant, the brand runs BBQ masterclasses and training courses for enthusiasts, and an online shop stocking house-blend dry rubs and spice mixes — making it possible for customers to recreate the BBQ Mafia experience at home.
