The concept

A completely new six-course menu, every six weeks

Six by Nico was founded by chef Nico Simeone in Finnieston, Glasgow in 2017. The very first menu -- "The Chippie" -- was a tribute to his Italian grandparents who owned a chip shop, taking the nostalgic flavours of battered fish and smoked saveloys and presenting them with fine-dining technique. That concept of "food as a narrative" has defined the group ever since.

Every six weeks, the entire menu is discarded and replaced by a completely new six-course tasting experience inspired by a different place, memory or idea. Returning guests experience a brand-new restaurant each time they visit. The Belfast location opened on Waring Street in the Cathedral Quarter, one of 14 UK and Ireland sites.

The price is fixed regardless of which menu is running: one price covers all six courses. Wine or cocktail pairing is optional. Vegetarian alternatives are available for every course on every menu.

How to read this menu. Six by Nico's menus are inspired-by rather than straightforward recreations. "Crisp Fish Finger Sandwich" does not mean a supermarket fish finger -- it means sustainable Lerwick Coley in a deconstructed format with jersey royal potato and mussel veloute. The spirit of childhood is the brief; the execution is contemporary fine dining.
