A former carriage house, a wood-burning hearth, and the cooking of fifteen countries.

Rose Previte opened Maydan in 2017 in a converted brick carriage house tucked into an alley off Florida Avenue NW in Washington, DC's U Street / Cardozo neighborhood. The concept grew from nearly three years of travel across the Middle East and North Africa while Previte lived in Moscow with her husband, NPR correspondent David Greene. A three-week journey through Morocco, Tunisia, Turkey, Georgia, and Lebanon became the blueprint for the menu.

The kitchen centers on a single open wood-burning hearth visible from the dining room. Everything — bread baked against the interior hearth wall, kebabs over the coals, whole animals slow-roasted for hours — comes from that one source of heat. The name Maydan (also spelled Meidan or Meydan) means a public gathering square in Arabic and Persian, reflecting the communal dining philosophy.

Maydan earned a Michelin star in 2019 and has held it continuously since.
