The River North room that started Hogsalt.

Gilt Bar opened in 2010 at 230 W Kinzie Street, a few steps from the Merchandise Mart and the Chicago River. It was the first restaurant from Brendan Sodikoff's Hogsalt Hospitality, the group that went on to open Bavette's Bar & Boeuf, Au Cheval, Maude's Liquor Bar and Small Cheval. The formula it established -- a dim, candlelit, vintage-styled room serving unfussy but polished Italian-American and tavern cooking alongside a serious cocktail list -- became the Hogsalt house style.
