About

About Wildweed

Wildweed began as a pasta pop-up venture in 2018 when chef David Jackman and his wife Lydia set out to bring hand-formed, freshly milled grain noodles to Cincinnati one event at a time. Over two years and more than 225 pop-up dinners — including full-time residencies and a multi-state tour — the couple built a devoted following before opening a permanent brick-and-mortar home at 1301 Walnut Street in Over-the-Rhine in 2024.

The restaurant describes itself as a "chef/author" concept, drawing a direct line between the chef's sourcing stories and what lands on the plate. Every menu evolves with the seasons: Jackman works with regional producers, foraged wild ingredients, and whole-animal butchery, then translates those relationships into noodles pulled from house-milled heritage grains, snacks layered with ferments and foraged garnishes, and larger plates built around Midwestern proteins. Historical pop-up posters and hand-written menus line the walls, honoring the restaurant's scrappy origins inside a dining room marked by a 30-foot mushroom mural and aquamarine detailing.

A chef's counter tucked within the open kitchen offers a tasting experience of roughly a dozen dishes tracing seven seasonal ingredients through courses and beverage pairings — what critics have called the most ambitious tasting menu in southwestern Ohio. The à la carte dining room remains the heart of the operation, open Tuesday through Saturday from 5 p.m., welcoming both reservations and walk-ins to share handmade pastas, craft cocktails, and the seasonal story Wildweed tells anew each week.
