More than a restaurant

The Stubb's Outdoor Amphitheater

Stubb's is not just a BBQ restaurant — it's one of Austin's most important live music venues. The Waller Creek Amphitheater capacity reaches approximately 2,750 for sold-out outdoor shows, making it a mid-size venue that punches well above its weight: artists from Radiohead to Billie Eilish to Willie Nelson have played here.

Three stages serve different needs: the main outdoor amphitheater for large ticketed shows, Stubb's Indoor for covered mid-size events, and the Patio Stage for smaller performances. All three are within the same Red River campus, steps from the BBQ kitchen.

During SXSW, Stubb's is one of the most sought-after stages in Austin. During Austin City Limits Music Festival weeks, it hosts satellite events and pre-festival shows. Year-round, the calendar is packed — check stubbsaustin.com for the current lineup.

About Stubb's BBQ

A Texas legend, a worldwide sauce, and a world-class stage.

C.B. "Stubb" Stubblefield was born in Navasota, Texas, and cooked BBQ his whole life. He opened his first restaurant in Lubbock in 1968, befriending legends like Muddy Waters, Stevie Ray Vaughan, Joe Ely, and Tom T. Hall. He moved to Austin in 1985 and the Red River Street location — which opened in 1995, two years before Stubb passed away in 1995 at age 64 — became an icon of the city.

Today, Stubb's Austin is operated by the Waller Creek Amphitheater Management group and remains true to the founder's two passions: feeding people great BBQ and giving live music a home. The Stubb's BBQ sauce brand, sold in grocery stores in over 30 countries, carries his name and recipes into kitchens worldwide.

Show nights

Eat before the show, not after

On concert nights, the restaurant fills quickly before the gates open. Arrive 60-90 minutes before showtime for a relaxed dinner. The patio and bar areas stay open during shows.

SXSW tip

Plan around the festival calendar

During SXSW (March) and Austin City Limits (October), Stubb's becomes one of the most in-demand venues in the city. Restaurant capacity may be limited on peak festival evenings — check ahead.

Parking

Use nearby garages and lots

Street parking on Red River is limited, especially on show nights. Multiple paid lots and garages are within a two-block walk. The venue recommends rideshare for easy drop-off and pickup.

Ordering

Ask the pit crew what's fresh

Like all great Texas BBQ joints, Stubb's smokes a limited quantity of certain cuts daily. Ask what came off the smoker most recently — brisket point vs. flat, or which rib rack was last pulled — for the best possible plate.

Common questions

Stubb's BBQ — frequently asked questions

Everything people commonly ask about Stubb's BBQ, the Sunday Gospel Brunch, the music venue, and the Austin location.

What is Stubb's BBQ in Austin known for?

Stubb's BBQ on Red River Street in Austin, Texas is known for three things: slow-smoked Central Texas barbecue (especially brisket, ribs, and sausage), the legendary Sunday Gospel Brunch with live gospel and blues music, and the iconic outdoor amphitheater that has hosted virtually every major act in live music. The Stubb's BBQ sauce brand, sold in grocery stores worldwide, originated from founder C.B. 'Stubb' Stubblefield's original recipe.

What is the Stubb's Sunday Gospel Brunch?

The Stubb's Sunday Gospel Brunch is a weekly Austin institution held on Sunday mornings and early afternoons at the outdoor stage. It combines a live gospel and blues music performance with an all-you-can-eat brunch buffet featuring smoked meats, eggs, biscuits, Southern sides, and Tex-Mex dishes. It's one of the most beloved weekly events in Austin and sells out regularly — reservations or early arrival are strongly recommended.

Does Stubb's BBQ have a music venue?

Yes. The Stubb's Outdoor Amphitheater, also called the Stubb's Waller Creek Amphitheater, is one of Austin's most beloved live music venues. It has three stages: the outdoor amphitheater (up to ~2,750 capacity), the indoor/covered Stubb's Indoor, and the smaller Stubb's Patio Stage. The venue hosts hundreds of shows per year and is a flagship site for Austin City Limits Music Festival acts, SXSW performances, and year-round ticketed concerts. The restaurant and venue share the same Red River address.

What are the must-order items at Stubb's BBQ?

The most-ordered items at Stubb's BBQ include the sliced brisket (slow-smoked Central Texas-style with a peppery bark), St. Louis pork ribs, smoked sausage links, and any of the Southern sides. At the Sunday Gospel Brunch, the BBQ Eggs Benedict (pulled pork on biscuit with chipotle hollandaise) and brisket hash are fan favorites. The smoked wings are popular for pre-show eating when there's a concert.

Is Stubb's BBQ good for vegetarians?

Like most Central Texas BBQ spots, Stubb's is meat-centric, but there are solid vegetarian options on the sides menu: coleslaw, mac and cheese, potato salad, jalapeño cornbread, corn pudding, fried okra, deviled eggs, queso with chips, and desserts. At the Gospel Brunch, migas (Tex-Mex scrambled eggs) and biscuits are vegetarian-friendly. It's not a vegetarian destination, but non-meat eaters can build a satisfying meal from sides and brunch items.

Where is Stubb's BBQ located in Austin?

Stubb's BBQ is located at 801 Red River Street, Austin, TX 78701, in the heart of the Red River Cultural District — Austin's live music corridor. It's walking distance from 6th Street, the Austin Convention Center, and East 6th. Parking is available in nearby lots and garages; the venue recommends arriving early on show nights. For current hours, concert calendars, and brunch reservations, visit stubbsaustin.com.

Is the Stubb's BBQ sauce the same as the restaurant?

The Stubb's BBQ sauce brand available in grocery stores nationwide (and internationally) traces its origins to C.B. 'Stubb' Stubblefield's original recipe developed in Lubbock, Texas. The bottled sauce is now owned and manufactured separately, but the Austin restaurant uses the original recipes and carries the same spirit. The sauces include Original, Spicy, Smokey Mesquite, Honey Pecan, and several others. The restaurant and the bottled brand are distinct business entities but share the same heritage.

Does Stubb's BBQ take reservations?

Stubb's BBQ accepts reservations for the Sunday Gospel Brunch and for larger groups — strongly recommended as the brunch sells out most weeks. For the restaurant on regular evenings, walk-in seating is typically available. Concert-night dining is first-come, first-served. Check stubbsaustin.com for current reservation and ticketing information, as policies can change seasonally.

What style of BBQ does Stubb's serve?

Stubb's serves Central Texas-style barbecue, which emphasizes the quality of the meat and a minimalist approach: beef brisket and pork ribs seasoned primarily with salt and black pepper, then smoked low and slow over indirect hardwood heat (typically post oak). The result is a thick, dark bark on the outside and a pink smoke ring inside. Sauce is served on the side rather than cooked in. This style contrasts with Kansas City (heavy sauce), Memphis (dry rub), or Carolina (vinegar-based) BBQ.
