About Razza

Dan Richer and the hyper-local pizza philosophy

Dan Richer grew up in Matawan, New Jersey, studied at Rutgers University, and then traveled to Italy to immerse himself in Italian cooking traditions. He was a James Beard Rising Star Chef semi-finalist in 2011 and opened Razza in Jersey City in 2012.

The core philosophy: every element of the pizza should come from as close to the restaurant as possible, and every decision should make the pie better. Flour is milled in Clifton, NJ. Yeast cultures are house-cultivated. Vegetables come from nearby farms. The Project Hazelnut pizza uses hazelnuts bred at the Rutgers Agricultural Experiment Station in New Brunswick -- a literal expression of New Jersey terroir on pizza.
