Maurice Bessinger opened the first Piggy Park drive-in in West Columbia, South Carolina in 1953. What set Maurice's apart from the start was his family's mustard-based BBQ sauce — the bright yellow, tangy Carolina Gold that became the defining sauce of the SC Midlands BBQ tradition.

While Memphis built its reputation on dry-rub ribs and Kansas City on thick tomato sauce, the South Carolina Midlands developed its own identity around the pork-forward, mustard-gold style. Maurice's helped bring that tradition to national attention by bottling the sauce for retail sale, eventually distributing it widely across the Southeast.

The restaurant is also one of the keepers of the hash and rice tradition — a slow-cooked pork stew served over white rice that is uniquely South Carolinian and nearly impossible to find outside the state.

Maurice Bessinger passed away in 2014. The brand continues under family ownership, operating multiple locations in the Columbia, SC area and shipping bottled sauce nationwide.
