About Maccheroni Republic

Downtown LA's destination for handmade organic pasta -- since 2014.

Opened in early 2014 by restaurateurs Antonio Tommasi and Jean-Louis de Mori (co-founder of the acclaimed Locanda Veneta), Maccheroni Republic brought an Italian-town pastificio model to South Broadway: a glass pasta room visible to the street, making every shape from scratch each morning in organic dough. The restaurant occupies a space with the feel of a classic Roman trattoria -- tin ceilings, mirrors, tile floors -- just across from the historic Grand Central Market.

The menu spans a dozen-plus fresh pasta shapes (bigoli, boccoletti, trifogli, pappardelle, linguine, squid-ink cuffie), hand-stuffed pastas (tortelloni, ravioli, agnolotti) and baked dishes (lasagna, gnocchi, Italian mac and cheese), all made daily. The flagship second course, a 16 oz bone-in Angus ossobuco with fusilli, has been on the menu since opening.
