Duck Carnitas -- Cosme's defining main course

The Duck Carnitas is the dish most associated with Cosme. A whole duck leg is slow-cooked confit-style in its own fat until the meat is silk-tender, then pulled and crisped so the skin shatters on contact. It arrives at the table with hand-pressed corn tortillas, a habanero salsa, and usually a fresh garnish of pickled vegetables or fresh herbs.

The dish is rooted in the carnitas tradition of Michoacan, Mexico -- pork cooked low in lard, then crisped -- but Olvera applies the technique to duck, producing a richer, more complex result. It is typically served to share (two or more people), and the kitchen sends it out with all the components needed to build your own tacos at the table.

Critics have named it one of the best dishes in New York City for multiple years running. If you are eating at Cosme for the first time, this is the main course to order.

  • Technique: Confit in duck fat, then crisped
  • Tradition: Michoacan carnitas, applied to duck
  • Served with: Hand-pressed corn tortillas, habanero salsa
  • Format: Shareable -- ideal for 2 or more
  • Recognition: Named one of NYC's best dishes by NYT, Eater, Bon Appetit
Iconic dessert

The Corn Husk Meringue -- what it is and why it matters

The Corn Husk Meringue is Cosme's most photographed and most written-about dish. It is, structurally, a meringue -- egg whites beaten and baked -- but formed inside a mold shaped like a dried corn husk, so it emerges as a delicate, paper-thin shell that looks exactly like a pale yellow dried corn leaf.

Inside the shell: ube (purple yam) cream and sweet corn mousse. The flavors are gentle and complementary -- the starchy sweetness of corn, the floral earthiness of ube, the airy texture of the meringue. It is less about bold flavor than about texture and concept: a dessert that references the outer wrapper of the tamale while inverting it, making the husk the food instead of the packaging.

It was named one of the best desserts in the United States by Bon Appetit, the New York Times, and Food & Wine. It has appeared on the menu since the restaurant's opening in 2014 and remains, with modest seasonal variation, Cosme's signature closer.

About Cosme

Enrique Olvera's New York restaurant -- and what makes it matter

Cosme opened on East 21st Street in the Flatiron district of Manhattan in 2014. It was Enrique Olvera's first restaurant outside Mexico -- a deliberate move to bring modern Mexican cuisine to a New York audience that had encountered the country's food almost exclusively through fast-casual chains and neighborhood taquerias.

The thesis of the restaurant is straightforward: Mexican cuisine, rooted in its indigenous traditions of masa, chiles, cacao, and seasonal produce, is one of the world's great culinary traditions -- and it deserves to be presented in the same context as French, Japanese, or Italian fine dining. Olvera had made that argument in Mexico City with Pujol (opened 2000); Cosme made it in New York.

The kitchen's approach to corn is central to understanding the restaurant. All tortillas are hand-pressed from nixtamalized heirloom corn sourced from producers in Mexico -- a labor-intensive process that produces a fundamentally different product than commercial corn tortillas. The emphasis on masa and tortilla craft runs through the entire menu.

Executive chef Daniela Soto-Innes led the Cosme kitchen from opening until 2020, earning recognition as the World's Best Female Chef from the World's 50 Best in 2019. The restaurant has maintained its Michelin star and its World's 50 Best ranking through successive kitchen leadership.

Dietary guide

Vegetarian, seafood, and dietary considerations at Cosme

Cosme's menu is not vegetarian-focused, but the kitchen works thoughtfully with plant-based ingredients and can often accommodate dietary restrictions with advance notice. The menu regularly features a vegetarian main (such as the Verduras a las Brasas) alongside the seafood and meat options.

Guests with dietary restrictions should note them when making their Resy reservation and confirm with the server on arrival. The kitchen is experienced at accommodating common restrictions, including vegetarian, pescatarian, and gluten-free (the corn tortillas are naturally gluten-free). Guests with serious food allergies should call the restaurant directly to confirm preparation practices.

  • Vegetarian options: Tamal de Elote, Tostada de Hongos, Verduras a las Brasas, Corn Husk Meringue
  • Seafood options: Oysters, Aguachile de Camaron, Tostada de Atun, Robalo en Mole Verde
  • Gluten-free: Corn tortillas are naturally GF; confirm preparations with your server
  • Serious allergies: Call the restaurant directly to discuss before reserving

Ordering strategy

How to eat well at Cosme -- a practical guide

First visit

Anchor on the Duck Carnitas

The Duck Carnitas is the dish most associated with Cosme. Order it as your main, share it between two people, and build the rest of the meal around it. It defines the kitchen's identity better than any other single dish.

Do not skip

Order the Corn Husk Meringue

The dessert menu changes, but the Corn Husk Meringue typically anchors it. This is the dish most written about by critics and the one most diners single out. If it is on the menu, order it.

Starter strategy

Lead with the raw bar

Cosme's raw preparations -- the Aguachile de Camaron, Tostada de Atun, oysters -- are among the strongest on the menu and a good way to calibrate the kitchen's technique before moving to cooked courses.

Tortillas

Order the hand-pressed tortillas

The house tortillas are made daily from nixtamalized heirloom corn. They are served warm and are among the best tortillas in New York. Order them -- they are worth it on their own as an expression of the kitchen's philosophy.

Drinks

Lean into the agave program

Cosme has an extensive mezcal and tequila program. If you drink spirits, the bar team is well-equipped to guide you through the agave selections by region and style. The Mezcal Negroni and house margarita are reliable entry points.

Sharing

Most dishes are meant to share

Cosme's menu is written for sharing -- the portions and formats (whole duck leg, shared mains, a la carte sides) are built around two to four people sharing. Order two to three starters, one main per person or a shareable main, a side, and a dessert. Ask your server for pacing guidance.

Common questions

Cosme NYC -- frequently asked questions

Nine questions about Cosme's menu, reservations, pricing, and what makes the restaurant worth visiting -- answered directly.

What is Cosme NYC?

Cosme is a modern Mexican restaurant at 35 East 21st Street in Manhattan's Flatiron district. It was opened in 2014 by Enrique Olvera, the chef behind Pujol in Mexico City -- widely considered the best restaurant in Latin America. Cosme earned a Michelin star and has been a fixture on the World's 50 Best Restaurants list since 2016. The executive chef who helped build the kitchen's reputation is Daniela Soto-Innes, who won the World's Best Female Chef award from 50 Best in 2019.

What is Cosme's most famous dish?

The Corn Husk Meringue is Cosme's signature dessert and arguably its most famous dish. It is a paper-thin meringue shell formed in the shape of a dried corn husk, filled inside with ube (purple yam) cream and sweet corn mousse. It has been named one of the best desserts in New York City by the New York Times, Eater, and Bon Appetit. It is the dish most photographed by diners and most cited in press coverage of the restaurant. Order it -- it is the one dish that best represents what Cosme does.

How much does dinner at Cosme cost?

Cosme does not publish its current menu with prices, and the menu changes seasonally. Based on published reviews and coverage from 2024-2025, budget approximately $85-$150 per person for food, before beverages, tax, and tip. With cocktails or wine, the total per person typically runs $150-$220 or more. The restaurant does not offer a prix-fixe tasting menu -- it operates a la carte with shareable plates. Confirm current pricing directly with the restaurant when reserving.

Does Cosme require reservations?

Yes. Cosme is one of the most in-demand reservations in New York City. Reservations are made through Resy on the official website (cosmenyc.com). Tables typically become available 30 days in advance and are released at midnight ET -- popular time slots (Friday and Saturday dinner, prime evening hours on weekdays) book within minutes of release. The bar and a small number of walk-in seats may be available on a first-come basis. Plan at least 3-4 weeks ahead for a dining room reservation.

What should I order at Cosme?

The dishes most consistently praised across years of press coverage and diner reviews: the Duck Carnitas (slow-cooked duck leg, served with fresh tortillas -- a signature main), the Corn Husk Meringue (dessert, must-order), the Bone Marrow Quesillo (starter), and the Tostada de Atun (yellowfin tuna). The hand-pressed corn tortillas -- made daily from nixtamalized heirloom corn -- are worth ordering on their own. If the Aguachile de Camaron is on the menu, it is one of the better raw seafood preparations in the city.

Is Cosme good for vegetarians?

Cosme has meaningful vegetarian options on a menu that is otherwise seafood- and meat-forward. The kitchen makes a point of showcasing vegetables: the Tamal de Elote, Tostada de Hongos, Verduras a las Brasas, and the fresh corn tortillas with salsa and cultured butter are all vegetarian. The Corn Husk Meringue dessert is also vegetarian. Diners should inform the server of any dietary restrictions when booking and on arrival -- the kitchen can often adapt or substitute for vegetarian guests.

Who is Enrique Olvera?

Enrique Olvera is a Mexican chef widely recognized as one of the most important figures in modern Mexican cuisine. He opened Pujol in Mexico City in 2000 -- it now ranks among the top 10 restaurants in the world on the World's 50 Best list. He opened Cosme in New York in 2014, and later expanded with Atla (also in New York, a more casual all-day restaurant) and other concepts. Olvera's cooking philosophy centers on honoring traditional Mexican ingredients -- particularly masa, mezcal, and regional chiles -- while reframing them within a fine-dining context. He is the author of several cookbooks, including Mexico from the Inside Out.

What is the dress code at Cosme?

Cosme does not enforce a formal dress code, but the restaurant has a sophisticated, design-forward atmosphere that most guests dress for. Smart casual is the norm: collared shirts, blouses, trousers, or dressy jeans. Guests arrive in everything from business casual to fashion-forward evening wear. Athletic wear, shorts, and flip-flops would be out of place. The space itself -- designed with warm wood, sculptural lighting, and an open kitchen -- sets a refined tone without being stiff or formal.

How does Cosme compare to Pujol in Mexico City?

Both are Enrique Olvera restaurants rooted in modern Mexican cooking, but they are distinct experiences. Pujol in Mexico City offers a prix-fixe tasting menu format, is ranked higher on the World's 50 Best list (top 5 as of recent editions), and is considered the definitive expression of Olvera's cuisine -- particularly its legendary Mole Madre (a mole aged for over 2,500 days). Cosme operates a la carte, is New York-facing, and incorporates locally available produce and New York dining rhythms. Both showcase nixtamalized corn, seasonal Mexican chiles, and raw seafood preparations. If you are only in New York, Cosme is the essential Olvera experience for the city.
