The half-smoke: Washington DC's iconic sausage, explained

If you've never been to Ben's and wonder what the fuss is about — start here. The half-smoke is both the restaurant's identity and DC's most famous food.

What it is

Pork & beef smoked sausage

A half-smoke is a type of smoked sausage made from a blend of pork and beef — coarser and spicier than a standard hot dog, with a distinct smoky flavor from the curing process. It is unique to the Washington DC area and is considered the city's signature dish.

How it's served

Steamed bun, homemade chili

At Ben's, the half-smoke is split and grilled, placed on a steamed bun, and smothered with Ben's own slow-cooked chili — a recipe that has not changed since 1958. Mustard and onions are the traditional accompaniments; cheese is optional.

Why it matters

DC's most famous bite

The half-smoke at Ben's has been eaten by presidents, civil rights leaders, musicians and millions of tourists. Barack Obama ate here the night before his 2009 inauguration. It has been featured in virtually every "best of DC" food list for decades.

History & culture

From 1958 to today: the story behind Washington DC's most beloved diner

Ben Ali, a Trinidadian immigrant, and his wife Virginia opened Ben's Chili Bowl on August 22, 1958, in a converted silent movie house at 1213 U Street NW. The location placed them at the heart of what was then DC's premier African American commercial corridor — a neighborhood sometimes called "Black Broadway" for its jazz clubs, theaters and independent businesses.

When riots swept through DC in April 1968 after the assassination of Dr. Martin Luther King Jr., U Street was devastated. Ben's stayed open, feeding firefighters, police officers and residents. It was one of the only businesses on the corridor to survive the aftermath.

Through the decades of U Street's decline and eventual renaissance, Ben's remained. Virginia Ali — who ran the restaurant and continued as its public face for decades after Ben's death in 2009 — was awarded the Presidential Medal of Freedom in 2023. The restaurant was designated a DC historic landmark in 2012.
